Japanese restaurant chain, Ippudo recently opened its first West Coast flagship store in Berkeley, CA. Located along Shattuck Avenue, the restaurant will span over 4,700 square feet and will carry the chain’s renowned tonkotsu-style (pork-based) ramen. Under partnership with Panda Express, the location takes over the former Biryani House restaurant and will span across the street level shared with Blue Bottle Coffee.

“The objective of the partnership is to develop and expand the brand in the US,” according to a representative for Panda Express, which also noted that “The parent company in Japan may develop more restaurants in NY.”

Ippudo’s menu ranges from classic to spicy hakata tonkotsu-style ramens and are based on a meticulously prepared three staged broth which takes 18 hours to prepare. There is also a menu of small plate options including specialty tempura-fried appetizers, juicy hirata steamed buns and a range of beverages including sake, beer and wine and cocktails.

The Berkeley location will be followed by a San Francisco-based ramen shop scheduled to open August 2017 at 18 Yerba Buena Lane. Link
